White Bean Chicken Chili (with modifications)
This is a stunner, but admittedly I changed a lot. Didn’t find it necessary to use the oven, so I tossed aside the bake pan. Had some onions, bell pepper, and garlic pre chopped and about to go bad so I sautéed them in a splash of bacon grease. Seasoned these well and browned until a fond produced.
Deglazed with the provided beans and salsa, then simmered on the stove. Didn’t take nearly as long as the oven instructions, and tastes great.
Topped with the provided cheese and some light sour cream. Had my own lime for topping as well.
