Go Pro 11 microphone for Motorcycle helmet

Hi all,

I am a newbie in Go pro world. I want to mount my go pro 11 on my motorcycle helmet. Hence, I am looking for pointers for the below:

1. Microphone for the go pro: I tried you tube tutorials but couldn't find a suitable one. Some videos mentioned we can use 3.5 mm jack directly. Some mentioned we need official Go-pro adapter to plug in.
2. How to manage the go pro while riding? Is it one long video during the entire ride or we should turn it on/off during the interesting parts of the ride? Is the go pro responsive enough to turn on/off quickly while riding?
