Do you delete your dating app profile if you start seeing someone or just pause it? Do you give matches a heads up?

(41F) It's my first time really back in the dating pool since I was 25 and a lot has changed lol. I'm curious about the etiquette for the apps like I've found people I was talking to just disappear sometimes and that feels a little odd but idk. I started dating someone in the last few weeks so I sent a message to a few matches that I had more deep conversations with and one of them got kinda mad at me. Idk I thought I was being considerate, I also deleted my hinge profile but noticed that there was the option to just pause it. Curious what other people do and think! Totally fine if you say I'm way overthinking things lol it's all pretty new to me
