I finally made the Gochujang Caramel Cookies

Last weekend. The recipe popped up on the Times again, and I let the comments convince me. Oh my goodness, they were ridiculous. My husband and I are the entire batch between Friday and Sunday.

The texture is out of this world. I took one person's advice and used a technique similar to lamination to spread the caramel by flattening the dough, spreading some, folding it in half, spreadng more, folding again, spreading again, folding again. Then I scooped about twenty cookies.
