Barb’s BQ, Lockhart, TX
The Full House ($150): 1 lb pork ribs, 1 lb moist brisket, 1 fajita sausage link, 1/2 lb turkey, 1 quart green spaghetti (counting as two sides), 1 pint potato salad, smoked pecan cobbler (not pictured), chocolate pudding with Mexican hot chocolate cookie crumble and whipped cream. We added a chicken thigh with mole ($10 special), a lamb chop ($10), bread ($5?) and a few drinks.
Barb’s is a fairly new place, right on the square in the BBQ capitol of Texas, Lockhart. Run by four women with experience at Franklin, Goldees, Micklethwait but with their own flair and dishes (like the green spaghetti) that are completely unique. Barb’s has won the praise of the New York Times and Texas Monthly among others.
Our meal was spectacular - each dish had a distinct flavor signature. Loved the lamb chop dipped in a little of the mole. TM’s Jose Ralat called the green spaghetti one of his best bites of 2023 - and he’s right. It’s an amazing dish that goes with everything (including as leftovers, pairing with tortilla soup at home later that day, just amazing). Open Saturdays and Sundays at 11. We arrived at 10 and were second in line, which stretched around the block by the time we sat down to eat. Absolutely worth it.
