Brownies keep turning out cakey?!
I’ve tried making four batches of brownies and they all come out soft and cakey. I used cafe delite world’s best fudge brownies recipe and King Arthur fudge brownies recipe, which are highly rated. However, the texture didn’t come out how I wanted.
I weighed all my ingredients and only folded in necessary amount with spatula. I’m extremely frustrated because of all the ingredients I wasted and I have no idea why…
Am I misunderstanding what “fudge” texture means? I’m looking to make dense, chewy, gooey brownies like Ghiradeli boxed brownies or coldstone brownie bits. What I’ve been getting is soft and cakey…
Am I not waiting long enough to set and firm down? Please help!!
Update: I modified my recipe into half cocoa powder + melted chocolate+butter and whipped eggs+sugar. It's closer to what I was looking for. I just need to watch out for baking time. Thank you so much for all the input!
