Apple’s VO2 Max implementation is horrible.

I have a Watch Ultra and I have been using it for the past one year to specifically track outdoor runs, walks and workouts. I have done multiple treks, can run a sub-30 5k and go on long runs expending moderate effort. To begin with, the VO2 readings were very low, but over past few months it has gradually improved. What irks me is how Apple calculates the VO2 Max, a specific example for this is if you are in the midst of a run/walk and if you have to pause the workout for any reason for even a second, the VO2 Max gets immediately updated in the Health app. Shouldn’t the final value be calculated after you actually FINISH the workout? I have noticed this happening multiple times and every time when I pause a workout, the metric gets updated in Health app and it usually plummets which is quite the opposite when I finish the workout without pausing it. Has anyone else noticed this?
