AITAH for wanting to cancel transaction via my bank for a small online Bakery order due to delays & excuses?

This issue feels relatively boring compared to most posts on this subreddit. I do apologise.
I placed an order for a unique type of brownie from a small Bakery i got either an Instagram ad for or an Instagram "Discover" Page Reel. (Buying something off potentially an Instagram ad was already a stupid decision in hindsight).
I researched the shop url on Trustpilot & it has 12 seemingly legitimate 5 star reviews. I placed my order on 27th December 2024 because that was when I got the advert. There was no indication on the website that there is/was delivery delays so I assumed it had returned to regular service. I understand that the festive season is a busy time for everyone, especially bakeries and food providers. I wasn't expecting my products next day delivery. I placed an order for a wide selection of brownies totalling over £35 plus shipping. After a wait of what felt like forever after Christmas but was probably only 8 days or so, I emailed their Customer Service email address to request update on the status of my order. Their response email 2 days later contained the somewhat sarcastic:
"yes that was 8 days. But that also includes a weekend and
8 days includes a weekend and a bank holiday!!!!" (This is genuinely how it was formatted). The owner cited Mental Health complications over the Christmas break that lead them to delete all their business applications from their phone & ignore their business over the festive season. They addressed that this wasn't stated anywhere on their website & claimed they were now back open for business This email said they would sent out my package week commencing 6th January 2025. It is now Tuesday 14th January 2025. I have not received my order or further correspondence. £35+ is a considerable amount of money to me that i shouldn't have spent on brownies but it would be even worse if I spent it on something I never received. If an item is posted in the UK to somewhere Mainland UK, it should take 1-4 business days. Friday 17th January 2025 will be 21 days since placing my order. I fear if I delay in requesting my bank cancel the transaction, they'll decline the request. Any advice, polite judgments or feedback would be much appreciated. The whole situation makes me really anxious. The thought of being scammed makes me feel sick to my stomach. I hope it's just a misunderstanding/unfortunate situation and not an elaborate scheme.
